I understand the attraction of recycling. I do my best to fill my recycling bin but not sure I’m in for “the detritus of cold-pressed juices” aka left over stuff.
Yup, a coffee shop and juice bar chain, Joe & the Juice, has just added a new item to its menu: pulp muffins. Hmm, not sure I’d call them that.
Many chefs have embraced the idea of sustainable cooking however they admit it’s not easy to make pulp palatable. Oh, well then, I’m sold.
Actually, the recycling or rather using all the vegetable is nothing new, moms and grandmas have been doing this forever. But kudos to chefs utilizing an entire vegetable now in their restaurants. It’s your job to make it tasty just like grandma’s food. ~grace
